Smoked Turkey and Artichoke Panini

(This picture doesn't even come close to giving this panini justice)

I made this last night for dinner and it was so unbelievably good I had one and a half sandwich's(which I regretted later because I was stuffed to the max). This dinner is super quick and easy and a great dish for the summer time. Don't worry if you don't have a panini press hagin in your kitchen that's totally fine, you can use the George Foreman grill (like I did) or you could possibly even use a good old frying pan. Ok so lets get cooking!

* Lemon Basil Mayonnaise *

1 C. Light Mayonnaise

3-4 Fresh leafs of Basil, chopped

1 tsp. Dried Rosemary

2 tsp. Lemon juice

1 Small garlic clove, minced


Mix all ingredients and let it hang out in the fridge until everything else is ready. I left the house for about an hour and a half so this gave the dressing a great chance to infuse all of it's flavors together and made the mayonnaise extra tasty. But if you are in a hurry it doesn't need to sit.

Panini Topping (serves 4)





Thin sliced turkey breast

1 Loaf artisan bread

1 Tomato, sliced

4 Slices of cooked bacon (not pictured)

1 Avocado sliced

4-5 Pieces of marinated artichoke hearts, chopped

2-4 Slices of provolone cheese

Olive Oil


Slice the bread into sandwich sized pieces and put lemon basil mayonnaise on each side of the bread. Then pile artichoke hearts, cheese, turkey,bacon, tomato and avocado inside the bread. Once assembled drizzle olive oil on the bottom side of the bread, place on the hot grill and drizzle olive oil on the top. Close the lid and let cook for about three minutes until it's golden brown.

Take off the grill and enjoy.

Summer Dinners


I love when I plan out a whole weeks worth of meals and even more excited to cook and and eat them! I'm trying to use my oven as little as possible this summer due to the 100 degree weather outside, so I'm doing a lot of grilling, crock pot dinners and salads in attempt to try and keep the house cooler. So I'll be grilling it , crock potting it and chopping it this week!

* Smoked Turkey and Artichoke Paninis with fruit

* BBQ Pulled Pork Sandwiches and Coleslaw

* Asian Chicken Salad and Rolls

* Homemade BBQ Chicken Pizza

* Grilled Tilapia and Mango Salsa with Lemon Basmiti Rice

* Tator Tot Casserole ( easiest thing ever to make and Brandon's favorite)

* Swiss Steak and mashed Potatoes and Gravy
